{October 23rd} Happy Monday! I have to say, I was overwhelmed with gratitude last night for all the stress of last week; going through rough patches really does make the good times exponentially better, and I'm ready to make this week that much more enjoyable ☺️ -- which always starts with a good breakfast, or brunch on this rainy day (loving it ☔️💙) -- 🍽 Egglette that started with sautéing Carrots 🥕 + Broccoli + Cauliflower in @kerrygoldusa 🍀 until a bit seared, then covering to allow them to steam and fully cook (always 🔑). Then I cracked in a @vitalfarms 🍳, added Egg Whites around the sides, and let set while I sliced up some French 🥖 toast with 🥑 and brewed some Pumpkin Spice 🎃 tea! I hope y'all are having a marvelous Monday so far!
